We serve two constantly evolving tasting menus of 6 or 9 courses which consist of ingredients from the farm, the ocean, and from our walks outdoors.

Our menu reflects what we feel best represents New Hampshire right now.

Snacks and introduction bites in the Living Room

Panisse with black garlic and ginger

Preserved parsnip financier, black walnut, black locust

Cabbage, onion, quinoa, dill

Hakeuri turnip, fermented ramps, garlic

“Serrano style” Bluefin tuna, warm vinaigrette of sheep fat and black truffle

Black Welsh Mountain sheep from the fire, clams, hazelnut, fermented carrot tare

Aerated Brie, dried mushroom madeleines, ginger, warm honey

Sorbet of wild wintergreen, “koji mole” with coffee, black sesame amazake
